Ingredients

  • 11 tablespoons of Tahini
  • 1 Lemon
  • 3 tablespoons of Greek Yogurt (2%)
  • 2 grams of Cooked Beetroot
  • 2 grams of Canned Chickpeas, Drained
  • 1 Carrot, Grated
  • 1 Green Onion, Finely Sliced (spring onion)
  • 12 grams of Fresh Rosemary
  • 12 grams of Feta Cheese
  • 2 grams of Walnuts, Chopped

Steps

  1. Place the tahini, lemon juice, yogurt, 1 tbsp. olive oil, salt and pepper into a small bowl. Stir to combine and set aside.
  2. In a large mixing bowl, combine the beets, chickpeas, carrot, green onion and parsley. Toss to combine.
  3. Serve the salad topped with feta cheese, walnuts, and pour over the tahini dressing.
  4. Tip: Bump up the protein by serving a baked chicken breast on the side.
